Everything You Need to Know About Bonbons

Workshop 1: Bonbon Basics—
Essentials of bonbon making

This beginner-friendly class covers the fundamentals of bonbon making, with a strong focus on fillings.

Participants will learn how to create a variety of ganaches and caramels and explore different ways to infuse them with flavors such as fruits and spirits.

What You’ll Learn:

  • How to temper chocolate using cocoa butter silk

  • How to create shells using polycarbonate molds

  • How to make different types of ganaches and infuse them with flavors

  • How to make different types of caramels and incorporate fruit and spirits

By the end of the class, you will be able to make chocolate bonbons from scratch and fill them with flavorful ganaches.

Workshop 2: Bonbon Bonanza—
Advanced bonbon making

This class is designed for those who have taken Bonbon Basics or the day-long Gourmandise School bonbon class and want to expand their skills. The focus will be on working with colored cocoa butter, advanced decorating techniques, and layered bonbons and bars.

What You’ll Learn:

  • How to create splatter-paint-style designs using colored cocoa butter

  • How to use cocoa butter-colored transfer sheets for decoration

  • How to hand-dip bonbons and add finishing touches

  • How to make layered bonbons and candy bars

  • How to refine ganaches and caramels for advanced applications

By the end of class, you will have a solid grasp of advanced chocolate techniques and more control over decorative elements.
