Everything you need to know about bonbon making, with a strong focus on fillings.
In this immersive, hands-on workshop, you will learn how to create a variety of ganaches and caramels and explore different ways to infuse them with flavors such as fruits and spirits. And we’ll decorate them, too.

How to temper chocolate using cocoa butter silk
How to create shells using polycarbonate molds
How to make different types of ganaches and infuse them with flavors
How to make different types of caramels and incorporate fruit and spirits
How to create splatter-paint-style designs using colored cocoa butter
How to use cocoa butter-colored transfer sheets for decoration
By the end of the class, you will be able to make chocolate bonbons from scratch and fill them with flavorful ganaches.
